1) Preheat the oven to 180°C. Place stewed apples in the bottom of your preferred baking dish and spread evenly. Cover the top with the other fruit. 2) Place the flour, cinnamon, mixed spice, ginger, brown sugar and margarine in a mixing bowl and mix until it makes a stiff batter. Use an electric beater if you have one. 3) Add the coconut and rolled oats and mix in. Once integrated, place the crumble topping over the fruit in the casserole dish. Place the walnuts over the top if liked. 4) Bake for 45 minutes (180°C) until golden and bubbling. Serve with coconut yogurt/ice cream, or a custard made with soy or oat milk. Serves 6-8. N.B., I like to have two fruits in this crumble to give variety, but you can substitute the other fruit for more apple if you want to. |
